Tahini Cake

Ingredients: 

  • 13/4 cups of whole-wheat flour
  • 1 cup of tahini
  • 1 teaspoon of vanilla extract
  • 3/4 cup of sugar
  • 1 cup of nuts, e.g. cashews, walnuts and almonds
  • 1 cup of raisins
  • 1 teaspoon of baking powder
  • Cinnamon powder
  • 1 cup of orange juice

Method: 

Preheat the oven to 140 degrees celsius. 

Prepare a baking tray by greasing it a little.
Mix all the ingredients (excluding the orange juice). Then add the orange juice, mix well and bake immediately.
This cake takes  about 30 minutes to bake, check to see if it’s done by inserting a fork; if it comes out clean then it’s ready.

Serve by lightly topping it with date syrup.
